This recipe for a juicy beetroot salad was inspired by my grandmother’s recipe.
She used juicy, tangy beetroot and crumbly warm goat’s cheese = a match made in foody heaven. Beetroot salad is just delicious. We’ve marinated the beetroot in a cumin-infused cider vinegar dressing.
Couple this with goat’s cheese after dousing in breadcrumbs.
Then bake into a glorious golden brown in the oven. This lunch is a little naughty, but its only 350 calories.
