Forget smooth and creamy – this minestrone soup is a real chunky monkey!
That’s because it’s got a flavoursome tomato base. And, unlike traditional Minestrone soup,we’ve added pulses rather than adding pasta. We think this makes a more nutritious and yummy alternative.
We also think the onion, carrots and celeriac/celery are key to the base flavour of this minestrone soup. Apart from that, you can add (or remove from the recipe) whatever veg you like. This recipe will also make enough for 3-4 servings. Finally, it’s easy to make and will keep in the fridge for a few days.
