Quinoa and avocado Salad – the Detox Kitchen

This is a brilliantly simple recipe perfect for breakfast, lunch or dinner. We recommend that you keep the quinoa as a base and add whatever vegetables you have in the fridge. Any salad that has a fried egg on the top has to be good!

  1. Cook the quinoa according to the packet instructions. Once cooked, drain the quinoa in a sieve and combine with the onion, pepper, avocado, capers, salt and pepper.
  2. Heat a little oil in a frying pan and cook the egg as desired and season with salt and pepper.
  3. Serve the egg on top of the quinoa salad.
